This yellow miso dressing is a simple and tasty addition to salads, sandwiches, veggie burgers, veggies and of course my favorite tortillas.
I am fortunate to have found Cold Mountain Light Yellow Miso which is NON-GMO.
Makes 1 Cup:
4-1/2 Tbl Light Yellow Miso (this is a paste, by the way)
4-1/2 Tbl Pure Maple Syrup (B Grade recommended) or substitute Blue Agave Syrup or use a combination–you can use less sweetener to start and add more after you taste.
3 Tbl Rice Vinegar or Wine Vinegar (I use a seasoned rice vinegar)
3 Tbl Mustard
Pinch or so of nutritional yeast (optional–added to make the dressing thicker)
Combine all ingredients in a bowl and mix well. Store in refrigerator (mine’s been in there for 2 weeks and is still good).
