I found this recipe when I was searching for something to make with the celery I had in my fridge. I did modify slightly (as I usually do) since I did not have Herbs de Provence in the pantry, I used a pinch of each basil, rosemary, Italian Seasoning and thyme. I used half coconut milk and half almond milk. I’d also like to say that I find the Irreverent Vegan’s assessment of how many servings this makes quite interesting. I don’t know who these 4 people are! I’d say this is more like 6 servings or so. I guess it doesn’t really matter anyway. It was very tasty!
