Don’t say you weren’t warned! Of course I didn’t just put my leftover vegan au gratin potatoes on a tortilla without any other items. That would’ve been quite lazy and boring, don’t you think? I took my favorite Trader Joe’s Chile and Onion tortilla and spread on a layer of refried beans (these were just hanging out in the fridge waiting to be eaten). Then I added my leftover potatoes and a little black pepper. I put it into the toaster oven at a low temperature of 250° so it would heat thoroughly without the tortilla getting too brown or burnt. Then I added some Phoney Baloney’s Coconut Bacon. That is all, except for… yum!
Healthy Hypocrite Tip: Whenever you make something like potatoes, lentils, beans, rice, quinoa or the like, always make enough so you have some left for the next day or so to use in different dishes.
