Oh yeah! Now we’re talking. You may have seen my vegan “Elvis” tortilla, the regular version with crunchy peanut butter. Well meet HElvis! H is for healthy, so H + Elvis = HElvis! This is an even healthier version of the tasty sandwich known as the Elvis. Why is it healthier? Well, for starters, it’s vegan. It’s made with almond butter, banana and Phoney Baloney’s Coconut Bacon. Oh, and it’s served open-faced tostada style on a Trader Joe’s Chia Seed Flour Tortilla. Simple, tasty, satisfying and great for any time of the day. Once again, I’ve outdone myself.
Healthy Hypocrite Tip: The easiest way to peel a banana is to push on the brown bottom end and it will sort of “pop” open for easy peeling. Most people open from the stem end which is actually the toughest part of the banana! Go figure.
