Easy no bake healthy nut balls!
1 cup raw almonds
1/4 cup raw cashews
1/2 cup raisins
13 dates (don’t forget to remove the pits!)
1+ ts p ground cinnamon
2-4 Tbl unsweetened cocoa powder (optional, but a nice add-on)
Put all ingredients into food processor and pulse until chopped/mixed. You may need to adjust nut, date or raisin quantities to make it easier to form into balls (I didn’t). Form into 1″ balls and that’s it! Keep in air tight contained in refrigerator. You can also make these into bars, and if you’re into shortcuts like me, this is the way to go. You’ll want to press into a pan and refrigerate a bit before cutting into bars. Of course you can modify these with other ingredients like coconut, walnuts, pistachios, chia seeds, ground flax just to name a few.
Healthy Hypocrite Tip: A well-stocked vegan pantry, like mine, will usually have these ingredients on hand making it easy to whip up a quick last minute treat for dessert or for a tasty gift!
