I know you’ve been wondering where the tortillas have been hiding. Well, my apologies, I was not up to posting due to some very unhealthy cold symptoms. There were still tortillas to be made and eaten, but not photographed or blogged about. So without further delay, on to today’s tortilla!

Trader Joe’s Brown Rice Tortilla, hummus, broccoli, cauliflower, fire roasted jalapeno, carrot, tomato, fresh basil, seitan O’ greatness, fresh parsley, baby spinach, avocado, zucchini, jicama, my secret no-salt seasoning, black pepper, Trader Jose’s Salsa Verde, orange bell pepper.
Healthy Hypocrite Tip: If you have to add salt to your food, try Himalayan Pink Salt next time. Never use regular iodized table salt if you can help it. Here’s a bit of information on Himalayan Pink Salt.
